What exactly does specification management involve?

Drawing up, updating and centrally managing product specifications: raw material, semi-finished and finished product specifications, with all the relevant technical, microbiological and allergen data needed for correct labelling and customer communication.

How often do specifications need to be updated?

Whenever there is a change in recipe, raw material, supplier or packaging, and reviewed at least once a year, even if there is no immediate reason. Certification schemes such as BRCGS and IFS expect demonstrably up-to-date specification management during an audit.

Who is responsible for approving specifications?

Usually the quality department, in consultation with product development and, for private label production, the customer who co-signs the specification.

What is the link between specification management and labelling?

A correct label can only be based on a correct, up-to-date specification: the ingredients list, allergens and nutritional values on the label must always correspond directly to what is set out in the specification. Incorrect or outdated specifications are one of the most common causes of labelling errors.
